10 oz. ground almonds
2 tbsp. breadcrumbs
3 tbsp. cornstarch
1 tsp baking powder
1 tsp cinnamon
peel of one lemon
2 medium carrots
2 small apples
6 fresh eggs
10 oz. sugar
1 pinch salt
4 oz. marzipan (I used almond paste)
2 1/2 oz. powdered sugar
5 oz. confectioner's sugar
♥ Mix together the almons, bread crumbs, cornstarch, baking powder, cinnamon and lemon peel.
♥ Peel the carrots and the apples and grate them finely.
♥ Separate the eggs.
♥ Beat together the egg yolks with 4 oz. of the sugar.
♥ Beat the egg whites together with the salt and the rest of the sugar.
♥ Mix the grated carrots and apple with the egg yolk and carefully fold in the egg white and the almond mixture.
♥ Line a 10 inch spring form with parchment pape and pour in the batter.
♥ Bake in a pre-heated oven at 350 degrees for 45 minutes.
♥ Remove from oven, loosen the cake from he form and allow to cool on a baking tray.
♥ For the decoraion add food color to the almond paste, roll between two layers of plastic wrap and use cookie cutters to cut out Easter Shapes, or any other shapes you desire, and then decorate with writing gel.
♥ Sprinkle the cake generously with confectioner's sugar and decorate with the almond paste shapes.
